  • 5-Minute Raspberry Sorbet

    This simple, gorgeous sorbet really takes only 5 minutes, and that’s including clean up! And it goes fabulously under Deep Dark Delicious Raw Chocolate Sauce (which also takes less than five minues to make!)! A complete dessert in only ten minutes!

    5-Minute Raspberry Sorbet

    1 package frozen organic raspberries
    1 t lemon juice
    squirt or two of raw agave nectar (to taste)

    Empty the raspberries, lemon juice and agave nectar into your Vita-Mix or blender.

    Blend on high speed until smooth (you really do want it smooth because of the raspberry seeds).

    If you prefer your sorbet on the softer side, either blend a bit longer, or leave raspberries out a few minutes (but only a few!) before blending.

    Serve immediately.

    Delicious with Deep Dark Delicious Raw Chocolate Sauce.

  • Annie’s Tropical Mousse

    This light, tropical mousse makes a great side or garnish to a main course, or a wonderful dessert.

    It is very light and refreshing, and amazingly simple to make.

    Annie’s Tropical Mousse:

    3 small avocados
    1 young coconut *
    zest and meat of 1/2 lime
    small amount of agave nectar, to taste (optional)

    Place the meat of the avocados, the meat of the young coconut, and the zest and meat of the 1/2 lime into a food processor with the “S” blade (the regular chopping blade). *

    If you are serving this as a dessert, and want it a bit more on the sweet side, add a bit of agave nectar, to taste.

    Process everything until it is light and creamy. Spoon into bowls or onto plates, and serve.
